Ribeye Cooking Methods

Sear

  • Bring steak to room temp, pat dry and salt steak.
  • Cast iron pan Hot (8/10)
  • Add tallow or avocado oil. Heat up
  • Sear fat cap for 45-1:15 depending fat thickness
  • Sear one side 3-3:30 min depending on steak thickness (lower temp to a 6/10 after a min or two)
  • Flip steak cook for 3-3:30 min depending on steak thickness. turn heat off after a min or two.
  • Cook to 118-120 degree ( temp will rise 7-10 degrees while resting)
  • Pull steak off and let rest on wire rack for 5+

 

Sear To Oven 

  • Bring steak to room temp, pat dry and salt steak.
  • Cast iron pan Hot (8/10)
  • Add tallow or avocado oil,. Heat up
  • Sear fat cap 45-1:15 depending how much fat
  • Sear one side 1 min Flip and sear other side 1 min
  • Put into 400 degree oven for 3-6 min depending on thickness
  • Cook to 118-120degree ( temp will rise 7-10 degrees while resting
  • Pull from oven move steak to a wire rack on a baking sheet and let rest for 5+ min

 

Reverse Sear

  • Preheat oven to 200 degrees
  • Bring steak to room temp (if you salt prior to cooking, the steak will have a spotted burn look when you pull it out of oven)
  • Place in 200 degree oven for 40-50 min depending on thickness. Cook to 118-120 degrees
  • Heat up Castiron pan, add tallow or avocado oil, let heat up
  • Sear fat 45 seconds-1:15 seconds depending how much fat
  • Sear one side 1:30-2 minutes, flip steak and sear other side 1:30-2 min
  • Move steak to a wire rack on a baking sheet and let rest for 5+ min

 

 

Grilling

  • Bring steak to room temp, pat dry and salt steak.
  • Heat Grill up on high
  • A. Sear both sides on high heat for crust and grill marks and then move steak to other side with lower temp and cook to 118-120 degrees
  • B. Med/high heat..400+ degree oven. Cook on one side 4 min , flip and cook other side 4 min. cook to 118-120 degrees
  • Move steak to a wire rack on a baking sheet and let rest for 5+ min
