Butter, Garlic and Herb Basted Bone-In Ribeye
Ingredients
- 2 (1¼-lb) bone-in rib eye steaks
- 2½ tsp kosher salt, plus more to taste
- ½ tsp freshly ground black pepper, plus more to taste
- 2 tbsp avocado oil
- 4 tbsp unsalted butter
- 4 sprigs thyme
- 3 garlic cloves
- 1 sprig rosemary
Directions
- Prep Steaks: Season steaks generously with salt and pepper. Let sit at room temp for 30 minutes.
- Sear Steaks: Heat tallow or avocado oil in a large cast-iron skillet over high heat until shimmering. Add steaks and sear until crusty on bottom, ~5 minutes. Flip steaks.
- Baste with Butter & Herbs: Add butter, thyme, garlic, and rosemary to pan. Baste continuously with melted butter and aromatics.
- Cook 5–7 minutes more for medium-rare.
- Rest & Serve: Transfer steaks to a cutting board. Rest 10 minutes.
- Slice meat off the bone, cut across the grain, serve.
