Bison & Turkey Chili

Ingredients:

  • 1 lb Ground Bison
  • 1 lb Ground Turkey (recipe can also be made with 2 lbs Ground Bison)
  • 1 Medium Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 2 Cans (15 oz) Diced Tomatoes (with juice)
  • 2 Cups Chicken or Beef Broth
  • 2 TBLS Chili Powder
  • 1 TBLS Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Oregano
  • ½ tsp Cayenne Pepper (adjust to taste)
  • Salt and pepper, to taste
  • Olive oil for cooking
  • Optional toppings: Shredded Cheese, Sour Cream, Diced Green Onions, Fresh Cilantro

Directions:

1. Chop the onion, garlic, and bell pepper. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground bison and ground turkey to the pot. Cook, breaking it up with a spoon, until browned and cooked through (about 6-8 minutes). Drain any excess fat if necessary. Add the chopped onion, garlic, and bell pepper to the pot with the meat. Cook for about 5 minutes until the vegetables are softened.

2. Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Cook for another minute until fragrant. Pour in the diced tomatoes (with juice). Stir to combine. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-45 minutes, stirring occasionally. If it gets too thick, you can add more broth or water. Taste the chili and adjust the seasoning if needed. You can add more chili powder or cayenne for extra heat.

3. Ladle the chili into bowls and add your favorite toppings such as shredded cheese, sour cream, green onions, or cilantro.
