Butter, Garlic and Herb Basted Bone-In Ribeye

Ingredients

  • 2 (1¼-lb) bone-in rib eye steaks
  • 2½ tsp kosher salt, plus more to taste
  • ½ tsp freshly ground black pepper, plus more to taste
  • 2 tbsp avocado oil
  • 4 tbsp unsalted butter
  • 4 sprigs thyme
  • 3 garlic cloves
  • 1 sprig rosemary

Directions

  1. Prep Steaks: Season steaks generously with salt and pepper. Let sit at room temp for 30 minutes.
  2. Sear Steaks: Heat tallow or avocado oil in a large cast-iron skillet over high heat until shimmering. Add steaks and sear until crusty on bottom, ~5 minutes. Flip steaks.
  3. Baste with Butter & Herbs: Add butter, thyme, garlic, and rosemary to pan. Baste continuously with melted butter and aromatics.
  4. Cook 5–7 minutes more for medium-rare.
  5. Rest & Serve: Transfer steaks to a cutting board. Rest 10 minutes.
  6. Slice meat off the bone, cut across the grain, serve.
