Steak Gyro With Dill Tzatziki Sauce
Ingredients
Steak and Pitas
- 1 to 1¼ lbs bison or beef steak ends or flat cut (flank, flat iron, skirt, or bavette)
- 4 whole wheat pitas
- 1 cup romaine lettuce, shredded
- ½ cup sun-dried tomatoes, chopped
- 1 large tomato, sliced
- ½ cup sliced and quartered cucumber
- ½ cup kalamata olives, pitted & sliced
- ½ cup artichoke hearts, quartered (marinated optional)
- ½ cup feta cheese, crumbled
Lemon & Dill Tzatziki
- 1 cup plain Greek yogurt (2% or full-fat)
- ½–1 English cucumber, grated or finely diced
- 1–2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1–2 tbsp fresh dill, chopped
- Salt & pepper, to taste
- Olive oil, for drizzling (optional)
Steak Marinade (optional)
- 1/3c olive oil (plus more for drizzling)
- 3 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp paprika
- Salt & pepper, to taste
