Steak Gyro With Dill Tzatziki Sauce

Ingredients

Steak and Pitas

  • 1 to 1¼ lbs bison or beef steak ends or flat cut (flank, flat iron, skirt, or bavette)
  • 4 whole wheat pitas
  • 1 cup romaine lettuce, shredded
  • ½ cup sun-dried tomatoes, chopped
  • 1 large tomato, sliced
  • ½ cup sliced and quartered cucumber
  • ½ cup kalamata olives, pitted & sliced
  • ½ cup artichoke hearts, quartered (marinated optional)
  • ½ cup feta cheese, crumbled

Lemon & Dill Tzatziki

  • 1 cup plain Greek yogurt (2% or full-fat)
  • ½–1 English cucumber, grated or finely diced
  • 1–2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1–2 tbsp fresh dill, chopped
  • Salt & pepper, to taste
  • Olive oil, for drizzling (optional)

Steak Marinade (optional)

  • 1/3c olive oil (plus more for drizzling)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt & pepper, to taste
