Skirt Steak Fajitas

Ingredients:

  • 3/4 lb TD Bison or Beef Skirt Steak
  • 1 tsp Orange Juice
  • 1 tsp Lemon or Lime Juice
  • 1 tsp Kosher Salt
  • 1 Clove of Garlic, minced
  • 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Hot Chili Flakes
  • 6 Large Flour Tortillas
  • 1-2 Red Onions
  • 2-4 Sweet Bell Peppers - mixed colors is lovely
  • 2 tsp Olive Oil

Directions:

  1. Slice the steak into strips. Mix together the citrus and all spices, toss to coat and let marinate 1 hour.
  2. Cut onions and peppers into thin strips.
  3. Heat a large cast iron skillet and add olive oil. Lift steak out of marinade and shake to remove excess liquid, drop meat into the skillet. Cook for 2-3 minutes until browned. Add onions and bell pepper slices to the skillet, stir and cook for an additional 4-6 minutes until everything is cooked through.
  4. While the steak is cooking, warm the tortillas on a griddle or skillet and serve with the sizzling fajita platter.
