Beef or Bison Osso Buco
Ingredients:
- 3 lbs Beef or Bison Osso Buco
- 2 Cups of Red Wine
- 3 Cups of Beef or Bison Broth, or water
- 3 Carrots, quartered
- 2 Onions, quartered
- 4 Celery Ribs, roughly chopped
- 1 Head of Garlic, cut in half
- 10 Thyme Sprigs
- 4 Rosemary Sprigs
- Salt to taste
Directions
- Heat oven to 325
- Sear Osso Bucco in dutch over on each side, 3 min a side
- Add all ingredients to dutch oven, cover and braise in oven until fall off the bone tender
- Remove Osso Bucco from pot and reduce the braise by 3/4 on stovetop for a beautiful rich sauce.
