Beef or Bison Osso Buco

Ingredients:

  • 3 lbs Beef or Bison Osso Buco
  • 2 Cups of Red Wine
  • 3 Cups of Beef or Bison Broth, or water
  • 3 Carrots, quartered
  • 2 Onions, quartered
  • 4 Celery Ribs, roughly chopped
  • 1 Head of Garlic, cut in half
  • 10 Thyme Sprigs
  • 4 Rosemary Sprigs
  • Salt to taste

Directions

  1. Heat oven to 325
  2. Sear Osso Bucco in dutch over on each side, 3 min a side
  3. Add all ingredients to dutch oven, cover and braise in oven until fall off the bone tender
  4. Remove Osso Bucco from pot and reduce the braise by 3/4 on stovetop for a beautiful rich sauce.
