TriTip, Cooking Tips

  • Bring tritip to room temp 30–45 minutes before cooking for even doneness.
  • Pat dry + season generously with salt right before cooking. Dry surface = better crust.
  • Sear the fat side down of the tritip over medium-high heat for 3–4 minutes until a deep crust forms. Give the remaining sides a quick sear to render and brown.
  • Transfer to a 400°F oven and roast for 25–35 minutes (depending on size) until the internal temperature reaches 120°F.
  • Rest 10–15 minutes before slicing; the temperature will carry over to about 130°F for a perfect medium-rare. Slice the tritip against the grain (see slicing guide on the back of this card). Serve with roasted fingerling potatoes and green beans.
  • Pairs well with: roasted fingerling potatoes and blistered green beans.

Fingerling Potatoes

    • Halve fingerling potatoes and toss with olive oil and salt. Arrange cut-side down on a sheet pan.
    • Roast at 400°F for 25–30 minutes, until golden and tender.

Green Beans

    • Add green beans to the oven during the last 12 minutes of roasting. Lightly toss with olive oil and salt before roasting.
