Guilt-Free Protein Cheese Dip

Ingredients:

1 lb ground Primal Blend (or any other ground burger) 1 Tbsp. avocado oil 1 small onion, chopped 1 16 oz. can black beans 24 oz. organic cottage cheese 1 Cup (fresh) shredded cheddar cheese 1 4 oz. can organic diced green chiles 1 14.5 oz. can organic diced tomatoes chips for serving

Directions:

Add 1 Tbsp. oil to heated skillet over medium- high heat. Add chopped onion and saute 2 minutes. Add ground meat and season with salt and pepper, cook through. Add in black beans. Using a blender: blend together cottage cheese, shredded cheddar, green chiles, and diced tomatoes until smooth. Fold in meat mixture to cheese mixture. Garnish with cilantro and lime. Serve with your choice of chips.

Fresh & Savory Taco Lettuce Wraps (With Spanish Quinoa)

Ingredients

1 lb. Primal blend (or any other of ground burger options) 1 Tbsp. avocado oil romaine lettuce “boats” 1/4 C. chopped onion (optional) 1 onion, sliced thin salt and freshly ground pepper your choice of 2 peppers (red, yellow, organge, or green) sliced thin 1 16 oz. can black beans 1 15.25 oz. can corn Toppings of choice (ie. sour cream, cilantro, fresh limes, tomatoes, etc.)

Spanish Quinoa

1 C. quinoa 1 14 oz can of diced tomatoes (with juice) 1 3/4 C. beef broth 1/2 tsp smoked paprika 1/2 tsp cumin Salt and pepper to taste 4 oz. can of green chiles (optional) 1 garlic clove.

Directions:

Add 1 Tbsp oil to heated skillet over medium- high heat. Add chopped onion and saute 2 minutes. Add ground meat and season with salt and pepper, cook through. Add in black beans and corn. In a seperate pan, saute thin slices of peppers and onion until cooked through. Serve mixture over lettuce leaves/boats with desired toppings. Spanish Quinoa : Add all ingredients into a pot, bring to boil. Let simmer until cooked through.
