New York Strip Steak, Cooking Tips
- Bring steak to room temp 30–45 minutes before cooking for even doneness.
- Pat dry + season generously with salt (and pepper if desired) just before cooking. Dry surface of steak on top and bottom, this will give a better crust when cooking.
- Use high heat. A cast iron pan or grill works best. Get it HOT before the steak hits.
- Sear fat cap first to render (1-2 min), then sear 2–3 min per side. Lower heat or move to indirect heat to finish.
- Use a thermometer for perfect doneness:
Rare: remove at 115°F
Med-Rare: 120°F
Medium: 130°F
- Rest at least 8–10 minutes before slicing to keep juices in the meat.
- Slice against the grain for the most tender bite.
- Optional: finish with butter, garlic, and herbs while resting.
