Kofta Skewer

Ingredients:

  • 1 Medium Red Onion, grated on a box grater
  • 3 Cloves of Garlic (optional)
  • 1 Cup of Italian Flat-leaf Parsley, Finely Minced
  • 2 lbs of Tangen Draw Ground Beef or Bison
  • 1 TBLS Whole Cumin Seeds or 2 tsp Ground Cumin
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Pepper (optional)

Directions:

  1. Place the ground beef into a large bowl and top with the rest of the ingredients. If you are using whole cumin seeds, mash them with a mortar and pestle before adding to the meat.
  2. Mix the beef mixture with the onion and aromatics until combined.
  3. Divide the meat into 4 equal parts and shape each part into beef kofta kebab shapes and grill as is or place on a skewer then grill over medium heat.
  4. The kebabs will take approximately 8 minutes each to grill.
  5. The 2 lbs of meat mixed with spices should yield 3-6 kebabs depending on the size.
  6. Serve with a yogurt sauce or buy pre-made tzatziki to pair it with – you can make it into a traditional sandwich by wrapping chunks of the kebab in warm pita and drizzling with olive oil or yogurt sauce. Enjoy warm or at room temperature!
