Eggplant Wrapped Steak Tips

Ingredients:

  • 1 lb Tangen Draw Steak Tips – about 5-8 pieces
  • 2 Small Eggplants
  • 1 can Tomato Paste
  • ½ Cup Grated Parmigiano cheese
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 2 TBLS Extra Virgin Olive Oil

Directions:

  1. Slice the eggplant into long thin slices – aim to have the same number of slices as you have of the steak tips. Spread approximately 2 tablespoons of tomato paste on the whole length of each eggplant slice and sprinkle the Parmigiano, salt and dried oregano evenly divided among the slices.
  2. Place one steak tip on each eggplant slice and roll up tightly. Drizzle with olive oil on all sides and place on a medium hot grill for 8 minutes on each side for a total cook time of 12 minutes. If you would like to cook this in the oven, roast at 400 for 12 minutes total, turning once during cooking.
  3. Enjoy warm or at room temperature!
