Dan Dan Noodles

Ingredients:
- 1 lb. Ground Beef or Bison
- ⅓ Cup + 2 Tbsp. sesame oil, divided
- 6 garlic cloves, thinly sliced
- 1–2 Tbsp. crushed red pepper flakes
- ½ Cup low-sodium soy sauce
- ¼ Cup hoisin sauce
- 1 Tbsp. honey
- 2 Tbsp. rice vinegar
- 3 Tbsp. peanut butter or tahini
- 2½ Cups low-sodium chicken broth
- 2 Cups baby spinach, chopped
- 8 oz. egg noodles or rice noodles
- 2 Cups mushrooms, finely chopped
- 1 shallot, finely chopped
- 4 green onions, chopped

Freshly ground black pepper, to taste.
Directions:
- Heat ⅓ cup sesame oil in a small saucepan over medium heat. Add the sliced garlic and crushed red pepper flakes. Cook for approximately 5 minutes, until fragrant. Carefully transfer to a heatproof bowl and set aside.
- In a small bowl, whisk together the soy sauce, hoisin sauce, honey, rice vinegar, peanut butter or tahini and ⅓ cup water until smooth.
- Cook the noodles according to package directions. Drain and set aside.
- Add the chicken broth and half of the prepared sauce to the same pot. Bring to a gentle simmer and stir in the spinach. Keep warm over low heat.
- Heat the remaining 2 Tbsp. sesame oil in a large skillet over medium-high heat. Add the Ground Beef or Bison and season with freshly ground black pepper. Cook for approximately 5 minutes, breaking the meat into small pieces as it browns.
- Add the mushrooms and shallot. Cook for an additional 2–3 minutes.
- Pour the remaining sauce into the skillet and simmer for approximately 5 minutes, until thickened and caramelized. Stir in 2–4 Tbsp. of the prepared chili oil, depending on your preferred level of heat.
- Divide the broth between serving bowls and add the noodles. Top with the crispy beef mixture, green onions and additional chili oil, if desired.
- Serve immediately.
