chopped Steak Tacos. Leveling Up Leftovers

Serves: 4-6 | Prep: 15 min | Cook: 10 mi

Ingredients:

  • 1 lb leftover steak, chopped (any cut works)
  • 10–12 Corn tortillas
  • ½ Cup White onion, finely diced
  • ½ Cup Fresh cilantro, chopped
  • 2 Limes, cut into wedges
  • ½ Cup cotija cheese, crumbled
  • 1–2 Avocados, sliced or diced
  • ½ Cup Crema (or thinned sour cream)
  • Salt, to taste.

Directions:

  1. Warm chopped steak in a skillet over medium heat until just heated through. Add a pinch of salt if needed.
  2. Heat corn tortillas in a dry skillet or directly over a flame until warm and slightly charred.
  3. Fill each tortilla with chopped steak. Top with diced onion, cilantro, cotija, and avocado.
  4. Drizzle with crema and finish with a squeeze of fresh lime juice. Serve immediately.
