Beef or Bison Tartare
Ingredients:
- 1 lb Beef or Bison, Minced (Hanger Steak, Tenderloin, Filet Mignon or Tenderloin Ends
- 1 Large Clove Garlic, Minced
- 1/2 Shallot, Minced
- 1 TBLS Capers, Minced
- 2 tsp Parsley, Finely Chopped
- 1 TBLS Whole Grain Mustard
- 1 tsp Lemon Zest
- 2 tsp Worcestershire Sauce
- 2 TBLS Unsweetened Ketchup
- Salt and Pepper to taste
Directions:
1. Use a sharp knife to mince the beef or bison into very small, uniform pieces. (Pro tip: partially freeze the meat for easier slicing.) Transfer to a mixing bowl and set aside.
2. Add the minced garlic, shallot, and capers to the bowl with the minced beef/bison.
3. Stir in the parsley, whole grain mustard, lemon zest, Worcestershire sauce, and ketchup until evenly combined.
4. Sprinkle with salt and pepper, mixing thoroughly but gently to avoid overworking the meat.
5. Cover the mixture and chill in the refrigerator for 15-30 minutes to let the flavors meld.
6. Plate as desired, serving immediately with toasted baguette, crackers, or fresh greens.
