Flat Steak With Citrus Corn Salsa, Simple Ingredients, Big Flavor

Ingredients:

Steak + Marinade

  • 1–2 lb Flat steak (Skirt, Bavette, Flank, or Flat Iron)
  • ½ Cup chopped Cilantro
  • ⅓ Cup Olive Oil
  • ¼ Cup Soy Sauce
  • Juice of 1 Orange
  • Juice of 1 Lime
  • 4 Cloves Garlic, minced
  • 1 Jalapeño, seeded + sliced
  • 1 tsp. Cumin
  • Salt + Pepper

Optional

  • Corn Tortilla Shells
  • Cotija

Corn Salsa

  • 2 ears corn (grilled or fresh off the cob)
  • 1 red Bell Pepper, diced
  • 2 Jalapeños, diced
  • ½ red Onion, diced
  • 2 Avocados, diced
  • Handful Cilantro, chopped
  • Juice of 2 Limes
  • Olive Oil
  • Salt + Pepper
  • Cumin
  • Paprika
  • Red Pepper Flakes (to taste)

Directions

  1. Marinate. Whisk everything together and coat the steak well. Let it sit at least 1–4 hours, overnight if you can.
  2. Make the Corn Salsa. Char or grill the corn, then cut off the kernels.
  3. Toss with: pepper, jalapeño, onion, avocado, cilantro
  4. Season with: lime juice, olive oil, salt, pepper, cumin, paprika, and red pepper flakes. Taste and adjust—don’t skip the extra lime and salt at the end.
  5. Cook the Steak. Get your grill or pan hot. Cook 3–5 minutes per side. Pull at medium-rare. Rest 5–10 minutes. Slice thin, against the grain
  6. Assemble. Load tortillas with steak, top with corn salsa, finish with: Crumbled cotija
