chopped Steak Tacos. Leveling Up Leftovers
Serves: 4-6 | Prep: 15 min | Cook: 10 mi
Ingredients:
- 1 lb leftover steak, chopped (any cut works)
- 10–12 Corn tortillas
- ½ Cup White onion, finely diced
- ½ Cup Fresh cilantro, chopped
- 2 Limes, cut into wedges
- ½ Cup cotija cheese, crumbled
- 1–2 Avocados, sliced or diced
- ½ Cup Crema (or thinned sour cream)
- Salt, to taste.
Directions:
- Warm chopped steak in a skillet over medium heat until just heated through. Add a pinch of salt if needed.
- Heat corn tortillas in a dry skillet or directly over a flame until warm and slightly charred.
- Fill each tortilla with chopped steak. Top with diced onion, cilantro, cotija, and avocado.
- Drizzle with crema and finish with a squeeze of fresh lime juice. Serve immediately.
